Homemade Peppermint Oreos

Homemade Peppermint Oreos


2 boxes Devil's food cake mix

4 eggs

2/3 cup vegetable oil

Frosting:

1 (8ounce) package cream cheese, softened

1/2 cup (1 stick) butter, softened

4 cups powdered sugar

1 teaspoon peppermint extract

sprinkles or crushed candy cane for decorating

green or red food coloring


Directions:

Preheat oven to 350 degrees. Line cookie sheets with parchment paper.


In a large bowl combine the cake mix, eggs, and oil with a mixer. The batter will be very stiff. Pinch of pieces of batter and roll into 1 inch balls. Place 1 inch apart on prepared cookie sheets and flatten slightly with fingertips. Bake for 8 to 10 minutes. Remove immediately from the cookie sheets with a spatula and cool on a wire rack.


In a small glass bowl, combine the cream cheese and butter until completely blended. Gradually add in the powdered sugar and peppermint extract and mix until the icing is smooth. Color frosting green or red if desired. Spread half of the cookies with icing and top with remaining cookies.


Roll in sprinkles, crushed candy canes, or just leave them plain.


Store in the refrigerator in an airtight container or resealable plastic bags.

BAKE for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with whipped cream, if desired.

French Toast with Candy Syrup


I Heart Naptime had this reipe on her blog and can I just say YUM-O!! I made this syrup for my kids and they said they don't want maple syrup again! SOoooo yummy!!

French Toast}


adapted from allrecipes

Ingredients

1/4 cup all-purpose flour

1 cup milk

1 pinch salt

3 eggs

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 tablespoon white sugar

12 thick slices bread - I made this yesterday with normal white bread, and it just wasn't the same... Use french bread if you can't find the texas toast!



Directions

Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.

Heat a lightly oiled griddle or frying pan over medium heat.

Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

{Candy Syrup}

3/4 c. buttermilk (3/4 c. milk w/ 3/4 TB of vinegar or lemon juice)

1 1/2 c. sugar

1 stick real butter

2 TB corn syrup

1 tsp. baking soda

1 tsp. vanilla

Combine buttermilk, sugar, butter, corn syrup, and baking soda in a large pot. This will bubble up!

Once it comes to a boil turn the heat back down to low and stir consistently for 5-10 min. The longer the better, just make sure not to burn it!

When it looks a golden caramel color remove it from the heat and add the vanilla. At that point try to resist eating it by the spoonful! Enjoy it on your french toast, pancakes, ice cream... or heck enjoy it right from the spoon! It will save in the fridge for up to 3 weeks!

Just be prepared, once you start making candy syrup, you will NEVER go back to normal maple syrup again. It just isn't the same...

Supplies needed for cookies:


- Small Gum drops ( I usually get the spiced drops from Walmart)

- BBQ Skewers

- Store bought cookies with holes in the center, my favorites are: Keebler Fudge Stripes & Murray Sugar-free Shortbread flower shaped cookies. You can also use Keebler Rite Bite, 100 calorie Grasshopper cookies or 100 calorie Cookies and Cream. (Just keep your eyes open as you shop, if the cookie or cracker has a hole in the middle, it will most likely work.)



Supplies needed for container:

Small flower pot

Floral foam

moss

ribbon

hot glue gun and glue




Step One: Put a gumdrop on a BBQ skewers and push it down about 3/4 an inch. It looks better if you put the gumdrop on upside down.




Step Two: Add the cookie - so far pretty easy right? I love easy and cute and so these cookie flowers are perfect!



Step Three: Add another gumdrop on top of the flower. This time, put the gumdrop right side up. And, there you have it - you just made a cookie flower.





Next, you need to prepare the container.



Step One: Locate a pot. I just get mine from Walmart or Hobby Lobby and I paint them. Sometimes I will buy these in advance, paint them and then stash them for when I need them down the road.



Step Two: Add floral foam to the inside of the pot. I like to buy a block of it and cut it to the size needed.







Step Three: Add your flowers and arrange bouquet. I always start with one in the center and then cut the bbq skewers down to adjust the height of each flower.



Step Four: Once all your flowers are in place, heat up your glue gun and very carefully add some moss on top of the floral foam. This will hide your foam and the bases of your skewers and will just add that extra touch of cuteness.



Step Five: Add a bow if you so desire, I always do.





Step Six: Go make a flower delivery to brighten someone's day.

Butterscotch Marshmallow Brownies


This is a recipe from whilehewasnapping. It looks soooo delicious! Another I can't wait to try!
1 cup butterscotch chips




1/2 cup butter

1 1/2 cups all-purpose flour

2/3 cup packed brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon vanilla extract

2 eggs

2 cups miniature marshmallows

2 cups milk chocolate chips



Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan. Melt butterscotch morsels and margarine in a large bowl in microwave. Stir the mixture well and let it cool to lukewarm. While the liquid mixture is cooling, mix flour, brown sugar, baking powder, salt, vanilla, and eggs into the butterscotch mixture; mix well. Fold in marshmallows and chocolate morsels. Spread batter into a lightly greased 9x13 inch pan. Bake 25 minutes. Be careful not to overcook. ENJOY!



It takes a little work, but is soo worth it, promise!

Creamy Chicken Taquitos


adapted from our best bites





1 lb. frozen chicken breasts

1 juiced lime

2 cloves garlic, pressed or coarsely chopped

1/2 tsp. chili powder

1/4 tsp. cumin

1/2 tsp. Kosher salt

1/4 tsp. black pepper





Put 1/4 in water crock pot on high for 5 hours, Shred and let cool.





Next mix chicken with:

1/3 C (3 oz) cream cheese

1/4 C green salsa

1T fresh lime juice

1/4 t cumin

1/2 t chili powder

1/4 t granulated garlic, or garlic powder

3 T chopped cilantro

2 T onions

1 C grated pepperjack cheese



small corn tortillas (or flour)

kosher salt

cooking spray



Heat oven to 400. Line a baking sheet with foil and lightly coat with cooking spray.



Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.



Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.



Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.







Place seem of tortilla on pan, spray with pam and sprinkle some salt on top.





Cook for 15 min....and enjoy!!! They're delicious!!





I topped mine with pico and served it with cilantro rice and beans.

Fall Cookies

Molasses Cookies


1 cup sugar

¾ cups shortening

¼ cups molasses

1 whole egg

2 cups flour

2-½ teaspoons baking soda

1 teaspoon cinnamon

1 teaspoon ground ginger

½ teaspoons ground cloves

¼ teaspoons ground cardamom

¼ teaspoons salt



Preheat oven to 350 degrees. Mix sugar, shortening, molasses, and egg together until well combined. Dump in dry ingredients, stirring dry ingredients together lightly. Mix together until dough is combined. Roll dough into walnut-sized balls, then generously coat each ball with sugar. Place balls on a baking sheet and bake for 9 to 11 minutes, allowing to bake for about a minute after cookies begin to crack. Remove cookies from baking sheet.

Snow Cone Syrup


Skip To My Lou has an awesome recipe for making snow cone syrup out of Kool-aid. Perfect for the kids' snow cone shop! :)

adapted from a friends mom's recipe

Crust

1/2 pkg. Pecan Shortbread Cookies, crushed

3 T butter, melted


Cream Cheese Layer:

8 oz. cream cheese, softened

1 cup confectioners sugar

1 cup cool whip


Pudding Layer:

2 small packages of Instant Lemon Pudding

3 cups milk (I used 2%)


Top Layer:

Cool Whip

Mix crushed cookies and butter and press into an 8 x 11 glass Pyrex baking pan.

Bake for 10 minutes in a 350 degree oven. Cool.


While the crust is cooling, mix softened cream cheese with the confectioners sugar. Fold in the cup of cool whip. Spread over cooled crust and refrigerate for 30 minutes.

Mix lemon pudding with 3 cups of milk and spread over cream cheese layer. I then refrigerate this layer for at least another 30 minutes before spreading the cool whip on top.

Creamed Potatoes and Peas

My grandma used to make these and I loved them. Haven't tried this one yet either... but hope to very soon!

Peas and Potatoes




4 medium red potatoes, cubed
1 1/2 cups frozen peas
2 Tablespoons butter
2 Tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups milk

salt and pepper to taste


Place potatoes in saucepan and cover with water. Bring to a boil. Simmer for 15-20 minutes until tender. Drain. Cook peas according to package directions and drain.


Meanwhile, melt butter in a saucepan, add flour, salt and pepper to form a paste. Gradually stir in milk. Bring to a boil. Cook and stir for 1 minute or until thickened.


Add peas and potatoes to sauce and serve. Salt and pepper to taste.


* I also like to add salt to my water when I boil the potatoes.

Baked Oatmeal



1 Cube Butter Softened

3/4 C. Brown Sugar

2 Eggs

2 C. Milk

3 C. Oats

2 Tsp. Baking Powder

1 Tsp. Salt

2 Tsp. Vanilla

2 TBSP. Cinnamon



Mix in mixer and then pour into a 9X13 pan. Bake for 25 minutes @ 375. Serve with any type of fruit on top and whip cream.


This looks so yummy! Haven't tried it yet... but I will SOON! :)
